An easy layered salad, bursting with immune system supporting vitamin C and the antioxidants from good olive oil. This colourful and bright salad is best during the height of citrus season, which in the UK is from January to March. During this time, not only will all the common citrus fruit like Navel oranges, mandarins, satsumas and grapefruit be at their best, but there will be some additional seasonal types available like the beautiful red-fleshed blood oranges.
The combination of the sweet sour acidity of the citrus with the mild creaminess of the fresh Italian burrata cheese is simply delightful.
INGREDIENTS
2-4 different citrus fruit (like an orange, a blood orange, a ping grapefruit etc.)
mild mixed salad leaves like butterhead salad, baby spinach (bagged salad mixes work well for this too)
1 whole burrata cheese
drizzle with Opus Olea fine extra virgin olive oil
1-2 spring onions, sliced into thin rounds
half a handful of walnut pieces
unprocessed sea salt to taste
fresh ground pepper to taste (optional)
METHOD
Layer all the ingredients starting with the salad leaves, followed by slices of the citrus fruit and topped with dollops of burrata cheese. Generously drizzle with the olive oil, sprinkle with sea salt, your sliced spring onions and the walnut pieces.
It is a really easy and refreshing salad, which in the depths of winter makes us look forward to the sunny, warm days of summer.
