Single olive variety, made with 100% "Koroneiki" variety olives.  

Minimal free acidity that is of a rare 0.1% - 0.2% (ie. more than 4x better than the regulatory limit of 0.8% for extra virgin olive oil). 

High in polyphenols: 560mg/kg with 11.2mg/20g of hydroxytyrosol

BOTH of the above markers are necessary for a legal health claim and Opus is multiples above the legal threshold of 250mg/kg for total polyphenols and 5mg per 20g of hydroxytyrosol - see chemical analysis cetificate in the images.
